Under Colorado's Cottage Food Law, I can only sell certain “non-potentially hazardous” foods—things like cookies, breads, muffins, and other shelf-stable treats. This means I cannot offer anything that requires refrigeration or special handling for safety, like:
Cream-filled pastries or pies
Custards (including pumpking pie) or cheesecakes
Buttercream or whipped cream toppings
Meat or cheese-based items
